Recover From The Holidays With Back-to-Basics Meatloaf

The holidays are a great time for being with family and gaining those 10 extra pounds because of all the holidays foods. It’s all peppermint, fudge and sugary pecan pie. There’s no such thing as a holiday vegetable.

For the past two months, my recipes have been a bit on the exotic side to take advantage of the holidays, but they are over and it’s time to get back to basics. Toss out that yule log and start preheating the oven, folks, because you’re having meatloaf.

While most people consider meatloaf a giant slab of beef with some breadcrumbs, change it up a bit by adding some pork and cheese into the mix. You don’t know heaven until you’ve had a cheddar loaf.

Ingredients:

1 pound of ground beef

1 pound of ground pork

1 package of onion soup mix

2 beaten eggs

1 1/2 cups of bread crumbs

3/4 cup of water

2 cups of shredded cheddar cheese

Preheat the oven to 375 degrees. Mix the beef, pork, onion soup mix, eggs, bread crumbs, water and 1/2 cup of cheese in a large bowl. This is one of those recipes where you get your hands dirty. You’re not doing it right unless your elbow deep in meat and cheese, squishing to your heart’s content.

Spread half of the mix into a baking pan, 9×5 is ideal, and then sprinkle the rest of the cheese on top. Spread the rest of the mix on top of the cheese and place it in the oven for an hour.

What you get is a cheese-infused loaf that is guaranteed to be delicious. The cheese and the pork add flavors that complement the rest of the meat without being overpowering. You can even experiment with different cheeses to find the one you like best.
