
I admit that when I think of meat for dinner, my mind tends to settle on beef or chicken. I don’t know why I never think about pork because I love sausage and pork chops, but it never crosses my mind.
I remember watching all those commercials about pork – the other white meat – as a kid, but does pork really have a spokesperson these days? In these health-conscious days, people shy away from bacon and sausage, but I wonder if people realize that if you strip away the fat and take a good look at the meat, this is actually quite healthy.
That’s why, for today’s recipe, I decided on a delectable pork chop recipe. It’s currently stuck on my refrigerator so that when I start thinking about dinner, I have a reminder about the other white meat.
Italian Breaded Pork Chops
3 tablespoons of milk
1 ½ cups Italian bread crumbs
½ cup Parmesan cheese
4 pork chops
4 garlic cloves, chopped
2 tablespoons olive oil
3 eggs
2 tablespoons of parsley
Let’s start by getting the oven to about 350°F. While that’s heating, beat the eggs in a bowl and, in a different bowl, mix bread crumbs, cheese and parsley.
Put a skillet (it must be oven proof, so no plastic handles) on the stove on medium heat and pour in the olive oil. Drop in the garlic and let both heat up and release their flavor. Be careful not to burn the garlic.
Dip the pork chop in the eggs and then into the crumb mix. If you want a nice think crust, repeat the process again. Put the chops in the skillet and let them brown on each side before placing the skillet in the oven for about 30 minutes. If you want to make sure the inside is cooked well, place a cooking thermometer in the meat and make sure its at least 160°F. After the 30 minutes are up, serve immediately with your favorite side dishes.
