My kids sure love their sweets. In the summer, they’re constantly craving frozen treats, so I’m always on the lookout for alternatives to the usual suspects, like ice cream and freezer
pops. One day, I was cruising the ice cream section at the grocery store when I came along frozen chocolate dipped bananas.
That sounded like the perfect treat for my little monkeys. We go through bananas like they’re going out of style. I picked up the box, and sure enough, the Cooper boys gobbled them up. They liked them so much, I thought, “Why not try making them ourselves?” The ones from the store were just plain chocolate on half a banana, which was simple, but hard for the kids to eat without coating their hands in a sticky mess. So, I added a couple of things to my recipe: chopped nuts and a stick. Some days my thinker really works for me.
Nutty Chocolate-Dipped Bananas
What you’ll need:
3 fresh, ripe bananas, peeled and halved
1/2 cup fudge ice cream topping, room temperature
1/2 cup finely chopped peanuts
6 wooden craft sticks
wax paper
medium sized bowl, microwave safe
cookie sheet
Instructions
- Line the cookie sheet with wax paper.
- Carefully insert wooden craft sticks into flat ends of the bananas, and freeze on lined cookie sheet until solid (about 2 1/2 hours).
- Remove the bananas from the freezer.
- One at a time, dip the bananas into fudge ice cream topping, covering them completely. Allow excess drips to fall into the bowl. If the fudge is too thick, warm it for 20 seconds in the microwave.
- Sprinkle the chopped peanuts over your dipped bananas, evenly coating them on all sides.
- Place the dipped and decorated bananas back on wax paper and return the cookie sheet to the freezer for about two hours, allowing the chocolate to harden.
- Serve and enjoy.
